Christmas, and it is time in Holland to bake spiced biscuits. The aroma of Speculaas fills the house with that festive feel. Our TeaLoveSpices blend of Quatre Èpices is created for this special treat!
250g flour (or 125 g wholewheat (Spelt / Kamut) flour +125g flour)
5 ml / 1 teaspoon baking powder
½ tsp salt
15-20g (2 to 3 -15ml measure spoons) Quatre Èpices
150g butter- at room temperature
175g brown fine suiker/ Muscovado sugar
3 tbsps buttermilk
1 tbsp cream
Peeled half almonds/ almond slivers for garnish
Sieve the dry ingredients together.
Beat Butter & sugar till light.
Add little by little the dry ingredients to make a light dough. Add the buttermilk just enough to bind the dough & to make it soft.
Cover in a bowl, and allow to stay in a cool place overnight or 8-10 hours, for spices to release their flavours.
Warm de oven at 150 deg C
Lightly grease a baking sheet / alufoil.
Place dough onto this sheet, place a large clingfoil on top, and roll out the dough till about a little over ½ cm thick.
Remove clingfoil. With a brush or fingers, brush the top with some cream.
Add the almond slivers/ or halves onto the dough. Gently press in.
Bake in the over voor 35 > 45 minutes.
Remove from oven.
Let cool completely.
Break into large pieces as biscuits.
